Cairan koloid ini dihasilkan dari ekstraksi endosperm kelapa (<\/span><i><span style=\"font-weight: 400;\">Cocos nucifera<\/span><\/i><span style=\"font-weight: 400;\">). Prosesnya melibatkan prinsip biologis dan fisika-kimia yang menarik untuk dikaji.<\/span><\/p>\n<ol>\n<li><b> Struktur Biologis Kelapa<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Endosperm kelapa terdiri dari jaringan parenkimatik yang kaya lipid (60-65%) dan protein (8-10%). Lipid tersimpan dalam bentuk emulsi alami dalam matriks sitoplasma sel (DebMandal &amp; Mandal, 2011). Kematangan buah menentukan viskositas santan akibat degradasi enzimatik polisakarida yang terjadi selama masa pematangan.<\/span><\/li>\n<\/ol>\n<ol start=\"2\">\n<li><b> Persiapan Bahan Mentah<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Kelapa tua dipilih karena kandungan lipid lebih tinggi. Tempurung dipecah untuk mengakses endosperm padat (daging kelapa). Daging kemudian dicuci untuk menghilangkan kontaminan.<\/span><\/li>\n<\/ol>\n<ol start=\"3\">\n<li><b> Ekstraksi Mekanis<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Daging kelapa diparut atau dihaluskan untuk meningkatkan luas permukaan sel. Proses ini memecah dinding sel dan melepaskan lipid teremulsifikasi. Penambahan air hangat (50-60\u00b0C) membantu melarutkan lipid hidrofobik sekaligus menjaga stabilitas emulsi (Tangsuphoom &amp; Coupland, 2008). Campuran diperas menggunakan kain katun atau mesin sentrifugal.<\/span><\/li>\n<\/ol>\n<ol start=\"4\">\n<li><b> Pemisahan Fase<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Santan segar merupakan sistem koloid dengan fase dispersi lipid dalam medium air. Emulsifier alami (protein kelapa) mencegah koalesensi lipid. Sentrifugasi atau pengendapan dapat memisahkan fase krim (lipid tinggi) dari fase aqueous.<\/span><\/li>\n<\/ol>\n<p><b>Aplikasi dalam Hidangan Idul Fitri<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Pemanasan santan selama memasak menginduksi denaturasi protein dan destabilisasi emulsi. Lipid terlepas membentuk tekstur kental dan aroma khas. Proses ini juga meningkatkan stabilitas mikrobiologis santan (Math et al., 2011).<\/span><\/p>\n<p><b>Penutup<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Pembuatan santan merupakan gabungan dari pemahaman tentang biologi seluler dan teknologi pangan. Teknik ekstraksi modern kini memanfaatkan enzim selulase untuk meningkatkan efisiensi (Rosenthal et al., 1996).
