yang lebih tinggi dalam rantai makanan (Lavoie et al., 2013). Proses ini menjadi perhatian serius dalam ekotoksikologi, terutama terkait akumulasi logam berat (seperti merkuri dan kadmium) serta senyawa organik persisten (POPs) seperti PCB (p<\/span><i><span style=\"font-weight: 400;\">olychlorinated-biphenyls<\/span><\/i><span style=\"font-weight: 400;\">) dan DDT (<\/span><i><span style=\"font-weight: 400;\">dichloro-diphenyl-trichloroethane<\/span><\/i><span style=\"font-weight: 400;\">) di biota laut. Kerang, sebagai filter feeder, rentan terpapar polutan ini. Lantas, amankah kita tetap mengonsumsi kerang?<\/span><\/p>\n<h3><b>Biomagnifikasi dalam Rantai Makanan<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Biomagnifikasi terjadi karena polutan tertentu bersifat lipofilik dan resisten terhadap degradasi. Saat organisme tingkat rendah (misalnya fitoplankton) menyerap polutan dari air, konsentrasinya meningkat hingga 10 kali lipat saat dimangsa oleh konsumen sekunder (zooplankton), dan terus bertambah pada predator puncak (ikan besar, mamalia laut) (Lavoie et al., 2013). Mekanisme ini menjelaskan mengapa kadar merkuri dalam ikan tuna bisa 100.000 kali lebih tinggi daripada di air sekitarnya (WHO, 2020).<\/span><\/p>\n<h3><b>Biomagnifikasi pada Kerang<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Kerang (Kelas: Bivalvia) berperan sebagai bioindikator pencemaran laut karena kemampuan filtrasinya yang tinggi (O\u2019Connor, 2002). Studi oleh Farrington et al. (2016) menunjukkan bahwa kerang di perairan tercemar dapat mengakumulasi PCB hingga 1.000 ng\/g berat kering\u2014level yang jauh melebihi ambang aman konsumsi manusia (EPA, 2021). Namun, akumulasi ini bergantung pada faktor lingkungan seperti suhu, salinitas, dan keberadaan mikroplastik sebagai vektor polutan (Avio et al., 2017).<\/span><\/p>\n<h3><b>Bolehkah Konsumsi Kerang?<\/b><\/h3>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Potensi Risiko Kesehatan<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Konsumsi kerang yang terkontaminasi dikaitkan dengan gangguan neurologis (merkuri), kerusakan ginjal (kadmium), dan efek karsinogenik (PCB) (WHO, 2020). Organ seperti hepatopankreas pada kerang menjadi tempat akumulasi utama toksin (Storelli, 2008).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Faktor yang Memengaruhi Toksisitas<\/b>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><b>Spesies<\/b><span style=\"font-weight: 400;\">: Kerang hijau (<\/span><i><span style=\"font-weight: 400;\">Perna viridis<\/span><\/i><span style=\"font-weight: 400;\">) lebih rentan menyerap logam berat daripada kerang darah (<\/span><i><span style=\"font-weight: 400;\">Anadara granosa<\/span><\/i><span style=\"font-weight: 400;\">) (Yap et al., 2016).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><b>Habitat<\/b><span style=\"font-weight: 400;\">: Kerang dari kawasan industri atau estuari memiliki risiko kontaminasi lebih tinggi.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><b>Pengolahan<\/b><span style=\"font-weight: 400;\">: Proses memasak dapat mengurangi 20-30% senyawa organik, tetapi tidak efektif untuk logam berat (Bosch et al., 2015).<\/span><\/li>\n<\/ul>\n<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Rekomendasi Konsumsi<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">WHO menetapkan batas aman konsumsi merkuri sebesar 0.3 mg\/kg berat badan\/minggu (WHO, 2020). Untuk kerang, disarankan tidak melebihi 2-3 porsi\/minggu dan menghindari konsumsi organ dalam (hepatopankreas).<\/span><\/li>\n<\/ol>\n<h3><b>Mitigasi dan Solusi<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Pemantauan Regulasi<\/b><span style=\"font-weight: 400;\">: Institusi seperti EPA dan Kementerian Kelautan wajib memperketat pengawasan kadar polutan di perairan budidaya.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Teknologi Akuakultur<\/b><span style=\"font-weight: 400;\">: Sistem <\/span><i><span style=\"font-weight: 400;\">recirculating aquaculture<\/span><\/i><span style=\"font-weight: 400;\"> (RAS) dapat mengurangi paparan polutan pada kerang (Boyd, 2020).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Kesadaran Konsumen<\/b><span style=\"font-weight: 400;\">: Pilih kerang bersertifikat atau hasil budidaya terkontrol, serta hindari konsumsi kerang dari daerah rawan industri.<\/span><\/li>\n<\/ul>\n<h3><b>Kesimpulan<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Biomagnifikasi tidak mengharuskan kita menghindari kerang sepenuhnya, tetapi menuntut kehati-hatian dalam memilih sumber dan frekuensi konsumsi.
